400g chilly paneer (4 people)
Ingredients
- 400g of paneer
- 4 tbsp maida
- 2 tbsp cornstarch
- 0.75 cups water
- 2 tbsp oil
- 4 dry red chilli
- 1 tbsp chopped garlic (6 cloves)
- 1 onion
- 1 capsicum
- 6 green chillis
- 2 tbsp soy sauce
- 1 tbsp green chilli sauce
- 2 tbsp maggi hot & sweet sauce
- 1 tsp red chilli powder
- 2 tsp sugar

- Tava (frying pan)
- Air fryer
Steps to Prepare
Fry the paneer
- Chop the blocks of paneer into small cubes
- Smaller cubes will remain crisp and capture flavour better (ideally smaller than picture)
- Mix 4 tbsp of maida, 2 tbsp of cornstarch and 2 tsp of salt with 0.25 cups of water into a thick paste
- Apply half of the maida, cornstarch paste on the paneer, toss around so that it is well covered
- Add 0.5 tbsp of oil to the frying pan and fry the paneer for ~2 minutes on a low flame, till the paste begins to crisp a little bit
- Take the paneer (paste should be fairly dry) and place in the air fryer
- Run the air fryer for 10 minutes, with temperature initially at 200° C, and then at 140° C, after 5 minutes







Cook the gravy
- Add 1.5 tbsp of oil to the tava, and add all the chopped vegetables (except garlic) to the tava
- After the vegetables have begun to caramelize a little bit, add the garlic and reduce the flame
- Add 2 tbsp of soy sauce, 1 tbsp of green chilli sauce & 2 tbsp of maggi hot & sweet saucer
- Add the remaining maida, cornstarch paste to the vegetables, and add 0.5 cups of water to allow a thick gravy to form
- Add 1 tsp of red chilli powder and 2 tsp of sugar to the paste and mix
- Add salt to taste and other sauces / spices as required, add water as required (without making the paste flowy)
- Add the paneer and toss around for a few minutes, just for the flavour to sink in, and heat, without allowing it to lose crispness
